    Place whole chicken in a roasting pan.

    Season generously with salt and fresh ground black pepper .

    Stuff the cavity of the chicken with lemon (halved) , thyme , rosemary , and garlic (crushed, unpeeled) .

    Scatter onion (sliced) around the chicken.

    Drizzle olive oil generously over the chicken.

    Pour chicken stock into the bottom of the roasting pan.

    Heat walnut oil in a skillet over medium heat.

    Add watercress and saute until wilted.
